Toquade 2021 is the 15th vintage. As the previous vineyard was pulled, I was searching for a new terroir for Toquade. I found a deep clay soil vineyard which produces very tasty fruit in St Helena. I cannot wait to share Toquade 2021 with you. Vintage 2021, farmers waited for the rain. The entire season granted us with barely 10 inches of water. Water saving was on all growers’ agenda this vintage. More than the farming strategy, the timing of the farming tasks- groundwork, suckering, irrigation- was major to obtain a substantial canopy and berry sizes. The Vineyards, like the one used for Toquade, located on the valley floor with deep clay soil had the best success in fruit quality and quantity. From veraison to harvest the weather was cool, which allows the fruit to produce a beautiful fresh aroma. Our Sauvignon blanc was hand harvested August 20.
After fermentation the wine was aged on lees with weekly batonage to increase his roundness and month texture for 7 months. Then the wine was bottled at the end of February 2022. The wine has a nice nose with guava, passion fruit, grapefruit aroma. In mouth, it has a nice crisp feeling at first, then a flavorful mid palate with a long finish of tropical fruits. Toquade can be enjoyed by itself or paired with dishes such as sushi, oyster, ceviche. It also goes well with fish-based recipes and Asian food.
